Employer is Making Changes without Consulting Me

It was mentioned to me that some changes may occur by my current manager, however, I was never told in detail what those changes were or when they would take place.
I later met with the VP of HR who mentioned I would be working under a different department and mentioned a laundry list of tasks completely unrelated to what my profession does.
I was told that I'm not really a person that belongs to my profession nor should I be doing the tasks I have been doing for over a year - which was what both parties agreed to when signing my job offer.
A few days later I receive an email from the VP of HR contradicting everything mentioned in the prior meeting.
Today, I see changes I did not agree to on our employee database.
I am under a different department and I report to the VP of HR.
I did not agree to this nor was I told the changes would take affect at the specific date.
This person (VP of HR) is inhuman to her staff members and lacks emotional intelligence, given that she makes most of her staff members cry in public.
I fear my job is being eliminated and they just want to throw a warm body into a vacant role unrelated to my profession.
I feel very disrespected and cornered - what options do I have?
