Unfortunately, it is difficult to provide a definitive response to your question.
According to several CIC representatives, it would really be up to the border agent at the time of entry. You will have to state that you wish to enter on the Visitor Visa to the officer and that you do not wish to land at that time.
If in fact it is allowed at that time, it is important to note that you must land however, before the expiry date stated on your Confirmation of Permanent Residence.
We strongly suggest that you contact the nearest Visa Office before you proceed in order to confirm this information or to get a definitive response.

Regarding your first question,
1) Required documents state copy of photo IDs, PR Card etc, so should I photocopy both sides of the same ID on same page or different pages?
According to the Citizenship and Immigration Canada (CIC) Call Centre, you can photocopy both sides of the same ID on the same page. It should only be one ID per page.
2) They only ask for "Biographical page of Passport(s)/Travel Document(s)" so, what about the pages of the passport with the Exit and Entry stamps from Canada and other countries. I traveled out of country 4-5 times during last 4 years so I have all the stamps to prove my stay, should I include it anyways even if they didn't ask for it?

If you have no intention to live in the Province that accepted you, that would be a significant change in why your application was accepted.
According to a Ministère de l’Immigration et des Communautés culturelles(MICC) Centre de contacts clientèle (Information service) representative, it may raise some questions during the landing process if it was discovered that you had no intention to reside in Québec. They may question you at the port of entry.
